Spicy Honey Garlic Chicken

Ingredients
4 boneless chicken thighs
2 tsp garlic, minced
2 tsp red pepper flakes
1 tsp salt
1 tsp pepper
3 tbsp honey
1 tsp vinegar
1 tbsp soy sauce


Bbopgi (뽑기) - A Korean Candy Snack

Bbopgi, is a Korean candy snack traditionally sold on the side of the road. You've likely seen the browned disks of sugar, often imprinted with designs, during the late fall/winter. It's also a fun and easy treat to make with students.

 Ingredients
1/2 cup of sugar
A pinch of baking soda


Applesauce for the classroom

This was one of my favorite lessons with my club class students. We learned about Johnny Appleseed, did some sequencing activities with the recipe, then made applesauce. My students were older and mature enough to cut up the apples themselves. With younger students, it might be better to come with pre-cut apples.

Ingredients
8 sweet red apples
2 tbsp lemon juice
2 tbsp butter
1/2 cup of sugar
1 tsp cinnamon

Stovetop Stuffing

Ingredients
8 slices of bread
1/2 cup of water
1/2 cup of milk
3 tbsp butter
1 tbsp olive oil
1 onion, chopped
1 tbsp garlic, minced
1 carrot, chopped*
8-10 button mushrooms, chopped*
1 stalk of celery, chopped*
1 tbsp parsley
1 tsp sage
1 tsp rosemary
1 boullion cube*
Salt and pepper to taste

Yogurt Sandwiches

Tuna Casserole

Ingredients
1/4 package of Tillamook Cheddar cheese Baby Loaf (or whatever cheese you can find!)
1 box of macaroni/penne/fusilli whatever pasta
1 large can of tuna
spices to taste (pepper, salt, basil, etc)

Pesto Cream Pasta with Tomatoes

Ingredients
10 ounces / 280 grams of pasta (fusili works particularly well)
2 tbsp butter
1/2 onion, diced
2 tomatoes, diced or grape tomatoes
2-3 stalks of green onion, sliced
1/2 cup of pesto
1/2 cup of milk
2 tbsp flour
1/4 cup Parmesan cheese (optional)





Kimchi Pork Stir-fry (제육볶음)

This kimchi pork stir-fry (제육볶음 or jae-yook bok-eum in Korean) can be served over rice or tofu.


Ingredients

Sauce
2 tbsp gochujang (고추장 / spicy red pepper paste)
2 tbsp soy sauce
1 tbsp minced garlic
1 tbsp sugar or honey
1 tsp sesame seed oil
1 tsp red pepper flakes*
1 tsp vinegar*
1 tsp black pepper

Recipe
200 grams of samgyupsal (삼겹살 / pork belly)
1/2 cup of kimchi
1/2 onion, chopped
1 tbsp sesame seeds*
1 egg, scrambled or fried*
1 carrot, chopped*
1/2 bell pepper, chopped*
2 Korean green pepper, chopped*
1/2 package of tofu*
1 cup of cooked rice*


Creamy Tomato Soup

Ingredients
3 ripe tomatoes
1/2 medium onion, chopped
1 small carrot*
1 celery stick*
2 tbsp of tomato paste* (tomato sauce works as an acceptable substitute)
2 tbsp of olive oil
1 tsp of sugar
1 tsp of basil*
1 tsp of oregano*
1 tsp of minced garlic
Salt and pepper, to taste
1/2 cup of milk
1/4 cup of vegetable broth or water



Spinach Mushroom & Chicken Farfalle

Ingredients
olive oil
5-10 cloves garlic
1 package chicken breasts (about 300 grams)
Just the sauce--still in the pan
1-2 bunches fresh basil
1-2 tsp dried thyme
salt
pepper
1-2 chicken bullion cubes (optional)
1-2 bundles fresh spinach (about 3-6 cups)
5-10 button mushrooms
1/4 cup butter (optional)
1/4 - 1/3 cup flour
4-6 cups milk
1 pack farfalle pasta

Simple Tomato Risotto

This simple risotto dish is easy to dress up. I like to add mushroom, spinach or zucchini -- whatever happens to be in your fridge.

Ingredients
1 tomato, chopped
1 tbsp butter (olive oil can be substituted)
1/2 onion, chopped
1 tsp garlic, minced
1/4 cup of milk
1/4 cup of water
1 tsp dried basil*
1 tsp dried oregano*
1 tsp red pepper flakes*
1 tsp miso*
Salt and pepper, to taste
1 tbsp Parmesan cheese*
1/2 cup uncooked rice or other grain blend (barley works particularly well)
Optional veggies: Mushroom, spinach or zucchini, chopped)

Chocolate Pudding Cake (RiceCooker Version)



 












Ingredients:

1 cup (120g) flour
¾ cup (150g) granulated sugar
3 Tbs (23g) cocoa
1½ tsp (7.5ml) baking powder
¼ tsp (1.25ml) salt
½ cup (120ml) milk
2 Tbs (30ml) cooking oil
1 tsp (5ml) vanilla (1½ tsp [7.5ml] vanilla powder)

¾ cup (135g) brown sugar
¼ cup (30g) cocoa
1¾ cup (420ml) warm water
